WORCESTER — What is the process for baking artisan breads?

As part of MassLive’s reporter road trip to Worcester, our staff made the restaurant our base of operations for the day. While there, owner Robert Fecteau allowed our cameras to go behind the scenes.

Canal District Alliance President Mullen Sawyer praised the business for its originality.

“This is a different concept in breadmaking,” Sawyer said. “This is, essentially, sustainable bread, rather than (commercial) bread. There’s a difference.

“They’ve been extremely well received,” Sawyer said. “They’ve really created a new market (in the Canal District).”
